Laura Schermeister, co-owner and general manager of Schermeister Winery gently stomping Atlas Peak Cabernet Sauvignon at Sugarloaf Crush near Oakmont in Santa Rosa. Schermeister’s husband and winemaker and Schermeister co-owner, Rob prefers whole berry fermentation rather than crushing the grapes by machine to prevent breaking the grape seeds which can create a bitterness in the finished wine. Stomping creates just enough juice from the tiny berries with ultra-concentrated flavors to combine with naturally occurring yeast and kickstart fermentation.
